Sausage Gravy


2/3 Cup per Serving/ 10 Servings

Ingredients:

Sausage, ground 2 #
Onions, Small diced ½ cup
Flour, All Purpose 3 oz (+/- to absorb fat)
Beef Base 1-2 t
Salt to taste
Black Pepper to taste
Milk ¼ Gallons
Worcestershire Sauce (optional) 1 oz

Procedure:

1. Heat milk & beef base in steamer until just warm
2. Brown Sausage and onions in a steam jacket kettle or roasting pan until meat looses its pink color. DO NOT DRAIN
3. Sprinkle flour over meat and stir into fat. Cook 5 minutes longer.
4. Add warm milk to meat mixture, stir as milk thickens.
5. Season with salt, pepper and Worcestershire sauce.
6. Adjust consistency, if needed, with corn starch slurry
7. Serve hot over biscuits.
