Ingredients:
Diced Chicken 3 pounds
Carrots, Shredded 1 large carrot
Red Onions, small diced 1 small onion
Red Pepper, small diced 1 small pepper
Celery, small diced 2 stalks
Parsley ¼ cup
Garlic, Chopped 2 Tablespoons
Mayonnaise 2 ½ cups (+/-)
Salt and Pepper as needed for taste
Procedure:
Season Chicken Breast with salt and pepper and bake until done, cool completely. Dice into small pieces and toss with remaining ingredients. Adjust seasoning with salt and pepper to desired taste. Chill and serve with fresh croissants.
