Aspen Grove Meat Loaf

10 Servings
Ingredients:
Ground Meat (12 oz Beef & 4 oz Pork) 2 lbs
Bread Crumbs 4 oz
Salt to taste
Pepper, Black to taste
Garlic, Chopped 2 T
Milk ¼ cup
Celery, Small Diced* 2 stalks
Onions, Small Diced* 1 small onion
Green or Red Peppers, Small Diced* 1 small pepper
Eggs, whole medium 2 eggs
Parsley, dried 2 T
Carrots, Shredded 1 large carrot or 2 smaller ones


Procedure:

*NOTE: vegetables can be run through a food processor after being cut, if they are still too big, making a couple of passes to insure that the vegetables are small. Large chunks of vegetables will cause the loaves to crack and fall apart during cooking.

Combine all ingredients in mixing bowl using the paddle attachment, or mix by hand until blended but DO NOT OVER MIX, this will cause the loaf to fall apart during cooking. Shape by hand into a tight loaf of uniform width insuring the ends are square and not rounded. Use water on your hands to smooth out any cracks. Place in an oven preheated to 375° for 1 ½ hour or until internal temperature reads 155°. Let rest for 20 minutes in a warm place.
